Rice is the most important staple food in the world and is the grain with the second highest worldwide production,

after corn.

Black Rice

Black Rice is a grain that is high in fiber and has a deep, nutty taste. It is high in nutritional value and is rich in

iron. It is not glutinous unlike other Black Rice from Asia. Black forbidden rice is a deep black color and turns deep

purple when cooked.

This unique variety has a relatively high mineral content (including iron) and, like most rice, supplies several

important amino acids.

Golden Rice

Golden Rice is a brightly colored variety of rice produced through genetic engineering to biosynthesize

beta-carotene, a precursor of pro-vitamin A in the edible parts of rice.

Wild Rice

Wild Rice is a variety that grows in shallow water in small lakes and slow-flowing streams. Oftentimes, only the

flowering head of Wild Rice rises above the water.

Brown Rice

Brown Rice is a variety that has a mild nutty flavor. This kind of rice is now more expensive than common White

Rice and is a staple for health conscious eaters who believe food should be consumed in its most natural state.

Bhutanese Red Rice

Bhutanese Red Rice is from the little Kingdom of Bhutan and is the staple rice of the Bhutanese people. It is a red

japonica and is semi-milled – some of the reddish bran is left on the rice. It is pale pink, soft and slightly sticky

when cooked.

Wehani Rice

Wehani Rice is an aromatic variety of brown rice developed in the late 20th century. It was developed from

Basmati Rice seeds from India. Its grains are reddish-brown in color and slightly resemble Wild Rice. The rice

produces an aroma similar to that of hot buttered peanuts and is slightly chewy when cooked.

Camargue Red Rice

quite sticky. It is a brownish-red color.

Arborio Rice

Arborio Rice from Italy that when cooked has rounded grains that are firm, creamy, and chewy, due to the high

starch content of this rice variety, thus they have a starchy taste of their own, yet blend well with other flavors. It is

used to make risotto, a popular Italian dish.

Japanese Rice

with Jasponica rice – a cross between the long-grained and fragrant Thai Jasmine rice and the sticky, soft

Japanese Rice.

Jasmine Rice

Jasmine Rice of Thailand seems just an ordinary variety of rice. It is also sometimes known as Thai Fragrant Rice.

It is a long-grain variety of rice that has a nutty aroma and a subtle pandan-like leaves flavor. The grains will cling

when cooked, though it is less sticky than other rice.

Glutinous Rice

glue-like or sticky. It is also called with a variety of names like Sticky Rice, Sweet Rice, Waxy Rice, Botan Rice,

Biroin Chal, Mochi Rice and Pearl Rice.

Basmati Rice

Basmati Rice of India and Pakistan is remarkable for its fragrance and delicate, nuanced flavor. Basmati is

Sanskrit which means “the fragrant one” and may also mean “the soft rice”. The grains of this variety are longer

than most other types of rice. Cooked grains of Basmati rice are characteristically free flowing rather than sticky,

as with most long-grain rice. Cooked basmati rice can be uniquely identified by its fragrance. Basmati rice is

available in two varieties – white and brown.

Economical Meal Using Vintage Recipes; Beef and Rice Dish, Saucy Carrots and Sugar Cream Pie

If you are looking for an economical meal to feed your family that is also quick, easy, and sure to please, give these recipes a try.  The main part of the meal is a great dish made with inexpensive ground beef and rice.  Onion, bell pepper, tomatoes, etc combine with the beef and rice for a tasty treat .  Add saucy carrots for added flavor and color.  Finish off your meal with a very simple but good old-fashion sugar cream pie.   This recipe calls for nutmeg to be sprinkled over the top.  If you aren’t a fan of nutmeg, use cinnamon.  Or you could use a small amount of vanilla or another flavored extract.  It is easy to make this pie in your family’s signature flavor.

BEEF AND RICE HOT DISH

1 lb hamburger meat
1 med onion, chopped
1/2 cup chopped green pepper
1/2 tsp salt
pinch pepper
1 1/2 cups uncooked instant rice
1 can (14 1/2 oz)stewed tomatoes
1 can (8 oz) tomato sauce
1 1/2 cups hot water
1 tsp prepared mustard

In a large skillet, brown hamburger meat and drain. Add onion, green pepper, salt and pepper to skillet and cook over medium heat until vegetables are tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Serves 4.

SAUCY CARROTS

5 large carrots
1 tbsp butter
1/4 cup honey
1 tbsp brown sugar
1 tsp lemon juice

Scrape and slice carrots. Cook carrots in small amount of water until tender crisp. Drain. Melt butter and add sugar. Stir until sugar is dissolved. Add remaining ingredients. Mix well. Add carrots and let simmer 20 minutes, stirring occasionally.
OLD FASHIONED SUGAR CREAM PIE

1 cup sugar
1/2 cup flour (or cornstarch and cold water)
1 1/4 cups hot water
dash salt
nutmeg
1 unbaked pie shell

Preheat oven to 350 degrees.

Mix sugar and flour together. Add hot water and salt. Mix together and pour into pie shell. Dot with butter and sprinkle nutmeg over the top. Bake at 350 degrees until done.
Enjoy!

Cooking: -rice is a Great Way to Add Bulk to a Meal!

1127070190 283130fbb2 m Cooking: rice is a Great Way to Add Bulk to a Meal!
by HarlanH

Cooking: -rice is a Great Way to Add Bulk to a Meal!

Stocking up on often used pantry items when they are on sale is the perfect way to not only save money on item you know will not go to waste but also to ensure that you will have enough ingredients on hand at all times to throw a meal together in a matter of minutes. Here is a list of my top ten pantry items that will help you add that all-day cooked flavor to quick cooking meals.

1. Pasta: Pasta is so versatile that you could make dinner with it every night for a month and never have the same meal twice. Dried pasta is the perfect pantry staple to stock up on every time it goes on sale at your grocery store. Keep different size and shaped noodles on hand to make meals more interesting. Dried pasta can be added to soups, stews or casseroles, it can be used as a bed for your favorite stir-fry, for more details visit to www.cooking-groundbeef.com to add some bulk to your meal or it can be the star of the show – a quick go-to meal by simply adding your favorite jarred sauce.

2. Spaghetti Sauce: Of course you can use a jar of spaghetti sauce to pour over spaghetti for a quick meal any night of the week, but think outside the box a little when it comes to this pantry staple. You would be surprised how many different ways spaghetti sauce can be used. The great thing about spaghetti sauce is that all of the cooking has been done and that all-day flavor is already sealed in. There are so many varieties on the store shelves that you can get a sauce with whatever flavor combination you prefer, for more details visit to www.apples-recipes.com or you can get a simple marinara sauce and spice it up your own way by adding fresh herbs and vegetables to suit your pallette and your menu.

3. Prepared Broths: Boxes or cans of prepared beef, chicken and vegetable broth are a must have pantry staple. When it comes to quick cooking you should not pass up any opportunity to add flavor. You can do this by substituting broth in place of water to add extra flavor to any recipe. You can even cook your rice in broth instead of water. If you cook often the larger boxes of broth can be stored in the refrigerator after opening so you can use as much or as little as you need and they can sometimes be a better bargain than the cans. If you do wind up with leftover broth in an opened container and are afraid that you will not be able to use it quickly, pour it into ice cube trays and freeze it. You can pop out as many cubes as you need and melt them right into your recipe. You can even get fancy by adding some dried herbs to your broth cubes before freezing for extra flavor.

4. Quick Cooking Rice: Rice is a great way to add bulk to a meal. Serving a stir fry of meat and vegetables over rice makes a delicious and satisfying meal. Rice is also a great way to add some whole grains to your diet by using brown rice or wild rice instead of white rice. Experiment with different flavors and find one that your family enjoys. Rice also makes a great side dish either by itself, with vegetables mixed in or simply topped with your favorite spaghetti sauce.

5. Condensed Soups: Condensed soups are a fabulous way to add both moisture and flavor to quick cooking meals. You will find recipe ideas right on the soup can labels and there have been entire cookbooks written around the theme of cooking with condensed soups. Cream of mushroom, cream of chicken, cream of celery and condensed cheese soup are probably the most popular. Take a close look at the soup selection the next time you are in the grocery store. Read the recipes on the labels and stock up on any that you can incorporate into your weekly menu planning. If nothing else, you can make soup for lunch or dinner on a cold rainy day. Don’t forget the chicken noodle in case somebody doesn’t feel well.
