How To Make A Delicious Stir-Fry Beef Over Brown Rice Dish For Diabetics
How To Make A Delicious Stir-Fry Beef Over Brown Rice Dish For Diabetics
This is a delicious recipe that is healthy for anyone but is especially diabetic-friendly. Made with thin-sliced beef and healthy vegetables, you can even enjoy this stir-fry over a small portion of brown rice without jeopardizing your diet. Make the rice without salt or butter; the stir-fry will flavor it so you won’t even notice.
DIABETIC STIR-FRIED BEEF
1 lb lean boneless top round steak, trimmed
2/3 cup water
1/4 cup chopped onion
3 tbsp reduced-sodium soy sauce
1 tsp beef-flavored bouillon granules
1 tsp Worcestershire sauce
1 clove garlic, minced
1/2 tsp salt
1/4 tsp black pepper
2 medium carrots, sliced diagonally
2 cups cauliflower flowerets
1 cup sliced fresh white mushrooms
1 pkg (6-oz) frozen snow peas, thawed partially
1/4 cup water
1 tbsp cornstarch
Partially freeze steak so it will be easier to cut diagonally across the grain into 1/4″ strips; set aside.
In a large bowl combine the 2/3 cup of water, onion, soy sauce, bouillon granules, Worcestershire sauce, garlic, salt, and pepper, stirring well. Add the steak to the mixture and stir well to coat. Cover and refrigerate for an hour, stirring after 30 minutes. Drain steak; reserve the marinade. Set steak aside.
In a medium saucepan cook the cauliflower and carrots in just enough water to cover them. Cook for 3 minutes once hot; drain and set aside.
Spray a wok or large skillet with nonstick cooking spray; heat at medium high for 2 minutes. Add the steak and stir-fry for about 3 minutes or until cooked through. Add the mushrooms to the steak and stir-fry another minute. Add the pea pods, carrots, and cauliflower; stir-fry another couple of minutes until the vegetables are crisp-tender.
Combine the reserved marinade, the 1/4 cup water and the cornstarch, stirring to blend well. Pour over the steak mixture and stir-fry until thickened and bubbly.
Serve over hot brown rice that has been cooked without salt or butter.
Enjoy!

Hippy Gourmet at Vegetarian House Healthy Brown Rice Dish
www.HippyGourmet.com http www.SupremeMasterTelevision.com In this segment from Organic Living with the Hippy Gourmet TV, we meet up with Sunny Mueller from the Vegetarian House in San Jose, California. Sunny shows us one of the restaurant’s famous vegan dishes, Healthy Brown Rice with sesame seeds and fresh organic veggies! Vegetarian House is much more than an incredible vegan restaurant it’s part of a global organization founded by Supreme Master Ching Hai, who delivers compassion and goodwill to people and animals in need all over the world.

This is an excellent authentic Mexican rice recipe that I make as a side dish with all of my Mexican dishes. If you use tomato sauce then don’t forget to add mexican spices, salt and specially cumin powder. I had ready mexican suaces, so didn’t use much spices since sauce contains spices already.

Economical Meal Using Vintage Recipes; Beef and Rice Dish, Saucy Carrots and Sugar Cream Pie
If you are looking for an economical meal to feed your family that is also quick, easy, and sure to please, give these recipes a try. The main part of the meal is a great dish made with inexpensive ground beef and rice. Onion, bell pepper, tomatoes, etc combine with the beef and rice for a tasty treat . Add saucy carrots for added flavor and color. Finish off your meal with a very simple but good old-fashion sugar cream pie. This recipe calls for nutmeg to be sprinkled over the top. If you aren’t a fan of nutmeg, use cinnamon. Or you could use a small amount of vanilla or another flavored extract. It is easy to make this pie in your family’s signature flavor.
1 lb hamburger meat
1 med onion, chopped
1/2 cup chopped green pepper
1/2 tsp salt
pinch pepper
1 1/2 cups uncooked instant rice
1 can (14 1/2 oz)stewed tomatoes
1 can (8 oz) tomato sauce
1 1/2 cups hot water
1 tsp prepared mustard
In a large skillet, brown hamburger meat and drain. Add onion, green pepper, salt and pepper to skillet and cook over medium heat until vegetables are tender. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Serves 4.
5 large carrots
1 tbsp butter
1/4 cup honey
1 tbsp brown sugar
1 tsp lemon juice
Scrape and slice carrots. Cook carrots in small amount of water until tender crisp. Drain. Melt butter and add sugar. Stir until sugar is dissolved. Add remaining ingredients. Mix well. Add carrots and let simmer 20 minutes, stirring occasionally.
OLD FASHIONED SUGAR CREAM PIE
1 cup sugar
1/2 cup flour (or cornstarch and cold water)
1 1/4 cups hot water
dash salt
nutmeg
1 unbaked pie shell
Preheat oven to 350 degrees.
Mix sugar and flour together. Add hot water and salt. Mix together and pour into pie shell. Dot with butter and sprinkle nutmeg over the top. Bake at 350 degrees until done.
